Jay Mac’s Crock-pot Roast Soup
INGREDIENTS:
2-3 lb roast (try to find a roast that is not too tall)
4 celery stocks chopped
1 yellow onion chopped or diced
2 red bell peppers chopped
6 clove garlic pieces sliced
1 cup chopped cilantro
3-4 cups beef broth (depends on size of crock pot)
2 cans kidney beans
2 cans diced tomatoes
4 tablespoons of cumin
1 packet of dry ranch mix
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons of honey
DIRECTIONS:
Start with putting the roast, broth, canned tomatoes and dry spices into crock pot. Cook on high heat.
Once meat is cooked, but not falling apart, then add all veggies and extra broth if needed. Cook on low heat.
Continue to let the crock pot do its work till you can easily break the meat up into smaller piece. Cook on low heat.
